Ingredients:
2 pounds boneless chicken breasts halved horizontally to make fillets
2 heaping tablespoons flour
3 tablespoons finely grated parmesan cheese
1 teaspoon salt
cracked pepper
1 tablespoon olive oil
2 teaspoons butter
8 ounces bacon, cut into small pieces, cooked with fat drained
1 small onion chopped
6 large garlic cloves minced & finely chopped
1 1/2 cups half & half
1/2 cup parmesan cheese
1/2 teaspoon corn starch
2 teaspoons water
1 tablespoon chopped parsley
Directions:
Step 1
Season chicken with salt & pepper
Step 2
Mix flour, parmesan cheese, salt, and pepper together in a bowl. Coat chicken fillets with flour mixture one at a time.
Step 3
Heat olive oil and butter in a skillet on medium heat. Cook chicken fillets in saucepan, approximately 4-5 minutes on each side, or until fully cooked and golden brown. Set chicken aside.
Step 5
Cook garlic and onion in skillet, roughly 1 minute (until the onion is transparent in color). Reduce heat to low simmer, then add half & half. Add 1/2 cup parmesan cheese, bacon, corn starch and water.
Stir until combined. Then add chicken back into pan. Top with parsley. Serve and enjoy!
* Serve with mashed potatoes or pasta. I served mine with garlic mashed potatoes and steamed vegetable medley.
